I am trying to set my Pocket outlook (WM6) to sync with exchange
SBS2003. The server address will accept only domain name, however our
exchange server is accessed via a link: https://xxx.xxx.xxx/exchange.
Whenever I put the 'exchange', the program dropped that and leaves
only the domain. Is there any workaround that?

Your SBS server should allow you to connect to with Activesync at just the
http://www.mydomain.com without the /exchange to verify this is working try
http://www.mydomain.com/oma this should allow you to get email in a text
format.
On my activesync devices I just enter www.mydomain.com and it works just
fine. Microsoft and I went round and round about this.
