I just ordered a Dell Axim with an intel x-scale PXA-250
processor. Most software I see is for the SH3, MIPS, and
ARM processors. Which one is mine compatible with??

1) There is no PXA-250 processor for Axim. 300 or 400 only.

2) All PDAs running PPC2002 have ARM compatible processors.

No, the Axim does use the PXA-250 XScale chip running at 300MHz and 400MHz.
"250" is not the speed but the model.

Actually, both are PXA-250 processors.
