I've moved from a Moto V551 to an Eten M500 and I can't figure out how to
send photos and videos via text message. When I try and send them as MMS
(versus SMS for text only?), I get a message telling me that I havn't
configured a modem yet.
With the V551 I could just take a pic and send it to someone; can't seem to
do that anymore.
is there some additional software I need, or am I missing something?

"text message" doesn't support images as it allows only text and is
limited to a total length of between 150 - 200 characters depending on
your providers restrictions.
You can send images via either normal (pop3 or imap) email or using your
isp's media message (MMC?) options.
More info on your provider would help, but I would suggest you contact
their tech support as a starting point... it's likely tht you will need
to set up a data/messaging account with them before you start.

I just don't understand how it would work with the V551, but not my
Pocket PC.
The plan I am on gives me unlimed text messaging, including sending
pictures. Is this a Pocket PC limitation? I cna't seem to receive
pictures either; I get the message, but then its the 'setup a modem'
message when I try to download the pic.
Assuming everything is the same with my plan, as when I had the V551;
shouldn't I be able to do the same stuff?

I think you should consult your communication provider(company) how to setup
a MMS connection.
Also, you must have MMS client installed too. This usually done by the phone
seller.
