OK, I'm stumped. How do I record a voice memo in Windows Mobile 5?

depends on serveral variables such as which device plus there are
numerous options.

_normally_ one of the buttons is set as "record" where you press/hold to
record and release to stop. if not, start/settings/personal/buttons
will allow you set set a button to record.

In notes, word and some other apps, you can also record by tapping the
tape icon at the bottom. In a phone call, there should be a notes
option on the phone pad, and once a note is started, you can do the
same, but, most phones will only record your end of the call.

As Beverly has pointed out, the built-in Notes can be very easily
configured/used as a one-button recorder.
